THE THREE HECTARES OF THE PINOT NOIR VINEYARD, SITUATED AT ABOVE 900 METRES, IS CARED FOR AS IF IT WERE A GARDEN. IT IS HERE THAT THE GRAPES FOR OUR BEST INTERNATIONALLY-RECOGNISED WINES ARE GROWN, AND THE HARVEST IS CARRIED OUT IN TWO SEPARATE STAGES TO ENSURE A BALANCED RESULT. COLD MACERATION AND TEMPERATURE-CONTROLLED FERMENTATION MAKE SURE THAT THE BEST QUALITIES ARE EXTRACTED FROM THIS DELICATE GRAPE VARIETY, AND PART OF THE MALOLACTIC FERMENTATION TAKES PLACE IN EXTRA-LARGE OAK BUTTS OF 300 AND 500 LITRES. THIS PREPARATION SAFEGUARDS THE CHARACTER OF THE FRUIT, AND IS FOLLOWED BY AGEING FOR EIGHT MONTHS IN THE BEST FRENCH OAK AVAILABLE.

Cared for as if it was a garden, our Pinot Noir vineyard has found the Serranía de Ronda to be the perfect environment for producing an elegant, floral wine of great quality.
