THE WINERY GOES TO EXTREME LENGTHS TO CARE FOR THE VINES IN AS NATURAL A MANNER AS POSSIBLE SO AS TO ALLOW THE TERROIR TO SHINE THROUGH AND OBTAIN THE HIGHEST LEVELS OF HARMONY. CORTIJO LOS AGUILARES HAS TAKEN ADVANTAGE OF THE EXCEPTIONAL 2010 VINTAGE, WITH ITS HIGH WINTER RAINFALL AND MODERATE SUMMER TEMPERATURES, TO COMBINE THREE GRAPE VARIETIES SPECIALLY ADAPTED TO THE CLIMATE OF THE RONDA SIERRA, TO MAKE THIS WINE. PAGO DEL ESPINO IS AN ELEGANT INTRODUCTION TO THE BODEGA, OUTSTANDING FOR ITS BALANCE AND ELEGANCE, A VERITABLE SYMPHONY OF FRUIT, FRAGRANCES AND LIGHTLY-TOASTED SPICES.

The aim of achieving the greatest expression of the wine by using larger oak casks has resulted in a perfect natural acidity that produces a long taste in the mouth that at the same time is smooth and fresh.

There is no question that this is one of the best wines the Bodega has produced until now, a pleasant combination of a classical Ronda red wine made under the Andalusian sun in a vineyard between the mountains and the sea, characterising the uniqueness of Cortijo los Aguilares.
